So-Moist Banana Bread
½ cup butter
1 cup sugar
2 eggs, beaten
1 tsp. vanilla extract
2 ripe bananas, mashed
1½ cup flour
1 tsp. baking soda
½ tsp. salt
½ cup coarsely chopped walnuts (optional)
- Preheat oven to 350°F.
- In a large bowl, cream together the butter, sugar, eggs and vanilla.
- Add mashed bananas and walnuts. Combine well.
- In a small bowl, mix flour, baking soda and salt. Add to the wet mixture and mix until combined. Do not overmix.
- Pour into a greased and floured loaf pan. Bake for 50-60 minutes, or until an inserted toothpick comes out clean.
